The extraction is done at the "F.lli Mitrione Sas" oil mill, continuous chain:

 

Triage - clearing - cleaning - grinding - kneading - liquid solid separation - liquid
separation - settling.

TASTING

Gold yellow color with shades of green. Intense, fruity, slightly bitter and spicy
aromas. The finish is long with subtle notes of almond and asparagus.


The blending of our three cultivars brings great complexity and balance to our oil.. 

To accompany to a Mediterranean cuisine. Pairs very well with grilled meats, tomato sauces, vegetable gardens and fish grilling..

THE TERROIR

 

Between sea and mountains and facing the Lake of Varano, our land is located
in the geographical area of the Gargano National Park in Apulia.

Here we have favourable climate conditions for the cultivation of olive trees destinated to the production of high quality extra virgin olive oils.
